Yummy Fall Foods: Sweet Potatoes & Squash

My addiction to squash and sweet potatoes are seriously real people. Every meal consists of some variation of squash, pumpkin, or yam. Maybe it's the changing leaves, blanket scarves, or Pumpkin Spice Lattes but I hope this craving doesn't end - it's all too good! 
Cooking for one is a daunting task in my opinion. I generally stick to a rotation of four different meals, call me the next Top Chef. What I wills say is that these colorful veggies and starches have added some new meal variations, and I love it! Items that I keep fully stocked include: spaghetti squash, acorn squash, butternut squash, and sweet potatoes. I substitute a lot of pasta with either spaghetti squash or sweet potatoes, and I like to pair butternut and yams together. 
I've compiled some recipes that I have tried or am planning to try. These foods are incredibly healthy for you and are packed with vitamins and nutrients. Anyway you can incorporate them in your diet - do so!

Recipes:
 // Spaghetti - This is super simple and one of my go-to's. I cook the spaghetti squash in the oven, use a fork to shred, top it with ground turkey and spaghetti sauce! It's delicious and very healthy.

// Sweet Potatoes & Grilled Chicken - After peeling the sweet potatoes, I peel them, and cut them into cubes. I boil them for about 20 minutes and add a mixture of spices. It pairs very well with marinated grilled chicken.

// Butternut Squash Soup - This is more labor intensive but it's absolutely delicious. My mother always makes butternut squash soup as an appetizer for our Thanksgiving meal. It's creamy very flavorful and makes great leftovers!

// Acorn Squash Treat - Acorn squash is super simple to bake and makes for a delicious treat. Slice in half,  add cinnamon and a little butter and place in the oven.

// Garlic Parmesan Spinach Spaghetti Squash - I have yet to make this yet but I am trying it next week - how yummy does that look?

// Easy Garlic Herb Butternut Squash - This recipe seems very simple for one, or two. Will be giving this a try next week too!
